It’s still winter and I am feeling the cold temperatures here in Upstate New York. Since we moved, I have been in a soup-making mood. It’s fitting honestly because the temperatures have been in the low 30s and dropping (one time it went to -8 degrees…I had never experienced anything like that before I moved here). So today I wanted to share with you one of my favorite soups. It’s easy, hearty, healthy, and most importantly, delicious! I hope that you enjoy it as much as my family and I do.
Vegan Lentil Soup
Serves 4-6
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup brown lentils
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1 bunch of kale, chopped
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and cook for 5-7 minutes until the vegetables are soft.
- Add the lentils, vegetable broth, diced tomatoes, thyme, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-40 minutes, or until the lentils are tender.
- If desired, add the chopped kale during the last 10 minutes of cooking.
- Serve hot and enjoy!
